Ingredients

2 skin-on chicken thighs
1 tbsp corn-starch
5 cm ginger, sliced
2 bird’s eye chilies, sliced
8–10 garlic cloves, smashed
Sesame oil (for cooking aromatics)
30 ml Chinese rice wine
30 ml soy sauce
30 ml dark soy sauce
25 g sugar
A handful of Thai basil
Sesame seeds (for garnish)

Directions

Cut the chicken thighs into small chunks.
Coat the chicken pieces with corn-starch.
In a pan, heat a drizzle of sesame oil and sauté the ginger, garlic, and chili until aromatic.
Add the chicken and cook until browned (about 5–6 minutes).
Deglaze the pan with the Chinese rice wine, then add soy sauce, dark soy sauce, and sugar.
Stir in the Thai basil and cook until the sauce thickens.
Garnish with sesame seeds and serve with steamed rice.
